Baked Falafel Salad with a Mint Hummus Vinaigrette

Baked Falafel saladI made baked falafel pita sandwiches last week for dinner on one of the nights and then the left over falafels were perfect for my lunch the next day!  I also decided to make an exotic (a.k.a. exciting) dressing to go with it. I had used lots of mint in my falafels and so I decided to make a hummus mint vinaigrette since I also had some left over hummus left. It came out great and perfectly complemented the salad.

Baked Falafel salad with a mint hummus vinaigrette

  • Servings: Makes 2-3 servings
  • Time: about 15 minutes
  • Difficulty: Easy

Ingredients:

6 baked falafels (See my Falafel recipe here)

For the hummus mint vinaigrette:

  • 1 tbsp hummus (see my home made hummus recipe here – you can omit the red pepper)
  • 3-4 fresh mint leaves(and cilantro/parsley -optional)
  • 1/4 cup extra virgin olive oil

Other salad ingredients:

  • 1 cucumber, peeled and diced
  • 1 cup shredded lettuce
  • 1/2 cup carrots shredded or juliened
  • 1 ripe avocado, peeled and diced

Method:

Bake the falafels as per my recipe here

For making the vinaigrette, add all the ingredients in a food processor and blend until you get a creamy vinaigrette. (For recipe of hummus, see the recipe of roasted red pepper hummus that I posted before. You can just omit the red pepper if you want to keep it simple.)

Break the falafels into bite size pieces and mix with the rest of the salad ingredients. Drizzle the vinaigrette over the top!
