Being completely dairy free and sugar free, I do miss some of my favorite desserts from before. Creamy fruit salad was one of my faves. Hence I had to come up with a vegan version.! And actually it wasn’t too hard. I have been making this vegan ‘milk’ shake with dates and nuts which is so creamy and yummy. This past week I decided to add dried figs to it too which gave it extra sweetness and flavor. And made it extra healthy too! It was so creamy and delicious that I decided to chill half of it and then later created this yummy fruit salad adding chopped apples, grapes and papaya. Fruit salad yummy yummy 🙂
Creamy Fruit Salad(Vegan)
- 3 dried figs (pits removed)
- 5 dates (pits removed)
- about 15 whole almonds(or about 1/2 cup)
- 5 walnut halves (or about 1/4 cup of walnut pieces)
- water about 1 cup
- chopped fruits of your choice for serving
Boil about 1 cup water in a cooking pot and add the dates, almonds and figs to it. Turn heat off and keep aside to soak for about 15 minutes. Now peel the skin off the almonds and add them to a food processor along with the dates and figs. Also add the walnuts. Add about 1/2 cup of the warm water and blend into a smooth paste. Then add slowly more water little bit at a time and continue to blend until you get a creamy mixture. (You may not need the entire cup of water)
Transfer the creamy mixture into a container and chill for at least an hour.
For serving the fruit salad, take a serving glass or bowl and add sliced fruits of your choice. Take the chilled custard and whip it with a fork to make it creamy again and pour over the fruits.
